Curried Parsnip Soup | 30/12/2020

  • 500g parsnips
  • 1/2 medium onion
  • 1tsp garlic paste
  • 1tbsp honey
  • 1tsp curry powder
  • Chicken stock cube
  • 750ml boiling water approx
  1. Peel, chop and shallow fry parsnips until starting to brown
  2. Peel, chop and fry onion until soft. Add garlic paste, mix and fry for no more than a minute being careful not to burn paste.
  3. dissolve stock cube in 500ml boiling water and add to soup maker along with the honey and curry powder.
  4. Top up to ‘Minimum’ line with water. Run ‘Smooth’ programme.

Made 3 x 390g approx portions.
